The water content of fresh mushrooms is 89%~91%, mainly from the culture medium. Water spraying is aimed
at increasing the air humidity of the cultivation environment. The water content of the culture medium determines
the yield and quality. In the presece of a water film on the surface of the culture medium particles, the extracellular
enzymes secreted by the front end of the hyphae diffuse through the water film, degrade the culture medium,
convert large molecules into small molecules of nutrients, absorb and store them in the hyphae, and the hyphae
continuously produce new branches, fill the gaps between the sawdust particles, and accumulate bioenergy.
When a certain amount is stored, it will produce mushrooms explosively under mechanical stimulation, temperature
difference stimulation, and a decrease in the pH value of the culture medium.

Water cannot be added indefinitely. If the maximum saturated water volume of the culture medium is exceeded,
free water will be deposited at the bottom of the cultivation bottle (bag), hindering the spread of mycelium. Enoki
mushroom cultivation has been looking for more absorbent materials, such as using dry bean dregs, beet shreds,
soybean skins, etc. to increase water content, meet the water needs of fresh mushroom development, and thus
increase yield.
